In this week’s 🌀 roundup: we’re sharing a new piece we published on SWURL written by Ivan Orkin, chef and founder of Ivan Ramen, plus a story on Chilean winemakers making sustainability a priority. There’s plenty happening too: an Austrian wine dinner at Gem Wine, Dog Days of Summer rolls on at Elbow Bread and an upcoming SWURL event 😲

My Pasta, My Rules: Why Wine Is My Secret Ingredient

In our latest article released this week, Ivan Orkin, chef and founder of Ivan Ramen, shares how giving aglio e olio a Japanese twist, and making wine his secret weapon, brings fresh energy to his cooking. From blending Japanese ingredients with Italian classics to letting wine quietly work its magic (in the pan and in the glass), this is a piece (and collaboration) we’re especially excited to share.

Chilean Wine Producers Look To Sustainability

Chilean wine producers have made sustainability a key strategic pillar, shifting from bulk production to organic farming, smarter water use, and wines that reflect the diversity of their regions. It’s a quiet revolution reshaping the country’s reputation and one worth reading about.

Other News & Other Stuff & Other Reads

  • Upcoming SWURL article: Colorado… wine?! Keep an eye out for an interview we’re releasing next week with Colorado winery, Aquila Cellars.

  • Upcoming SWURL Event: We may or may not be throwing a party at Entre Nous in Fort Greene, Brooklyn on Friday, July 25th from 7pm to until Clem & Allie decide to close 👀

  • NYC restaurant opening: Sirrah, a new French restaurant and bar opening today in Meatpacking, puts a bold New York spin on steak frites with a $75 four-course menu.

  • Boston restaurant opening: Darling opens today in Cambridge’s Central Square, bringing hyper-seasonal cocktails and a reimagined dim sum menu to the former Mary Chung’s space (beloved Chinese restaurant that served Sichuan dishes for 40 years). This moody new spot is one to watch in Boston’s bar scene.

  • Gift idea: Josephinen, from legendary glassmaker Kurt Zalto, has one of the most stunning collections of handblown glasses (it takes six people to make just one). They’re delicate and definitely a splurge, but hands down our favorite. Pro tip: don’t bring them out at a dinner party, someone will break one.
